Breakfast Tacos


I am sure you have heard that breakfast is the most important meal of the day which is great because breakfast is my favorite meal of the day. And once a day isn’t enough for me – I love making breakfast foods for breakfast, brunch, lunch and dinner. (Brinner is the best, isn’t it?)

I have several breakfast recipes that I love to make often like Spinach Avocado Egg Wrap and Ham & Cheese Croissant with a Twist, but Breakfast Tacos are a go-to favorite. While I love making breakfast foods, I do want it to be something easy too. These breakfast tacos are so easy to make and taste delicious.

To make these easy breakfast tacos you will need eggs, corn tortillas, shredded cheese, bacon (or your choice breakfast meat), salsa, chopped avocado and butter. 

Anything in a taco shell is always good, and these breakfast tacos are so good that you will want to make them all the time. You can easily add in some sauteed veggies into the breakfast tacos. I don’t usually add any because the family doesn’t like them, but onions, carrots or even tomatoes would be tasty in this dish.

How to Make Breakfast Tacos


Start by cooking your bacon using your favorite method.  I personally love baking it in the oven or using my cast iron skillet out on the grill.  It helps keep the all-day bacon smell to a minimum.

You can fry the tortillas or just warm them in the oven. Frying the shells would be the hardest part of this recipe. I prefer my shells fried, but just warming them makes this process quicker and bit more health-conscious. To fry the corn tortilla, add a little bit of canola oil to a flat skillet.

Place the corn tortilla in the oil and spread it around with rubber tongs. Cook for a minute or two and then flip the tortilla with the tongs. When both sides are starting to brown and most of the oil has cooked off, use the tongs to flip half of the tortilla to form the shell.

Hint: the wetter the tortilla is with oil, the harder it will be to form the shell. You could use something like this Tempura Rack to drain the oil off the tortillas.

  • Drain the bacon and the shells on a paper towel covered plate. Scramble the eggs, chop the avocado and shred the cheese. Then you are ready to start assembling the tacos.
  • Lay a slice of bacon on one side of the shell.
  • Then layer the eggs, shredded cheese, salsa and avocado in the shell.

Ingredients

  • Small Corn Tortillas
