Simple Egg Salad

One of my favorite things about this simple egg salad is how it includes fresh dill and lemon juice. Instead of dill pickles or relish like others have included in the past, this one relies on some fresh herbs and lemon juice to offer great flavor.

I find that many don’t like the pop of vinegar with pickles but love the fresh dill flavor. That is what makes this simple egg salad an ideal choice.

We love adding eggs to our lunch routine since they pack such a great punch of protein and are so easy to prepare. Simple Egg Salad

Egg Salad has long been a favorite for lunchboxes, ladies teas, baby showers, and birthday parties. It whips up in minutes, is frugal and easy to make, and is high in protein.

Ingredients

  • 8 Hard Boiled Eggs
  • ¼ Cup Mayonnaise
  • 2 teas. Yellow Mustard
  • 6 Green Onions, thinly sliced
  • 2 teas. Fresh Dill
  • ½ teas. Salt
  • ½ teas Pepper
  • ½ Lemon’s Juice

Instructions

  1. Peel Eggs and cut in quarters lengthwise, then cut the quarters crosswise into 5-6 pieces and place the whites and yolks in a bowl.
  2. Stir in the Mayonnaise, Mustard, 4 Onions, Dill, Salt, Pepper and Lemon juice until well combined. Be sure to break up the yolks.
  3. Serve on a sandwich, lettuce wrap or on its own. Garnish with additional Onion and Dill.
