We are on Spring break this week with the kids and one of the ways we enjoy a family vacation on  budget is by finally utilizing the timeshare that my husband and I purchased after getting married.  Having our timeshare has greatly helped our pocketbook and still allowed us to enjoy wonderful activities that each city we visit has to offer.  This year we are visiting Las Vegas and as many of you know one of the biggest cost killers in Vegas is the food.  It’s almost impossible t take the family out for under $60 a meal unless you know some good restaurants for the locals, which we don’t.  By hitting up the grocery store when we got to town we have been able to save a ton of money and invest spend that money on entertainment, which the kids are going to remember better anyway.

Easy Slow Cooker Recipe ~ Green Beans, Sausage and potatoes

Just because we are avoiding hitting a restaurant at every meal to save money doesn’t mean that I want to spend all of my time in the kitchen cooking.  I could be doing that at home in my own kitchen rather than a 400 square foot space, not to mention the fact that I have limited supplies or utensils.  One of my go to meals for times like this is this easy slow cooker recipe of  Green Beans, Sausage & Potatoes.

For me this slow cooker recipe of green beans, sausage and potatoes is easy to fall back on as I can have everything chopped and in the slow cooker within 10 minutes and be out the door!  By adding 2 packages of smoked sausage my family has a meaty one pot dinner ready when we get back from the days excursions.  Served with a quick dessert of berries and whip cream my family is ready to fall into bed after a very busy day.  I can feel good that we saved a good chunk of money, I didn’t spend forever in the kitchen and clean-up is a cinch.

If you prefer to have just a different side for the night you can cut the sausage down to 1 package of smoked sausage and you have more green beans than meat making it a delicious flavorful side.

Ingredients
  • 1- 2 pounds of smoked sausage or Kielbasa sausage this will be 1 or 2 packages
  • 1 ½ pounds of fresh green beans or 4 cans
  • 5-6 potatoes
  • 1 tablespoon of seasoned salt
  • 1 cups – 1 ½ of chicken broth
Instructions
  1. Wash and cut potatoes into small cubes. I choose not to peel the potatoes however you can if you prefer.
  2. Cut smoked sausage into bite size pieces
  3. Wash and cut up fresh green beans
  4. Toss potatoes, sausages and green beans into the crockpot
  5. Pour in a cup to a cup and a half of chicken broth and season to taste with the seasoned salt.
  6. Cook on low for 8-10 hours

Calorie count is figured with 1 lb of Kielbasa sausage, 4 cans of green beans and 5.5 potatoes.

    This sounds delicious and so easy! My parents have a timeshare in Myrtle Beach and my mom makes a lot of meals in her crock pot when we visit. One of our favorites is Barbeque Beef Sandwiches, its so easy and no one is stuck in the kitchen instead of at the beach.

    My parents have a timeshare that we’ve used occasionally. Going out to eat gets old and expensive. I prefer to make some meals while on vacation, Great idea to slow cook while enjoying your day. Tasty looking meal!

    I made this over the weekend. Used the fresh green beans and new potatoes. The sausage melted in your mouth it was so tender. The broth left over would be wonderful to start a soup or frozen and used the next time you make this. It has lots of flavor.

    Delicious. I recommend putting the potatoes in the bottom so they will stay under the broth. Otherwise they can turn gray.

    This looks so good! How long do you think this takes to cook on high? 4 hours? I’d like to make this for lunch yet don’t want to have to wake up in the mid of the night to start the crockpot. TIA!

      I would perhaps quadruple the recipe just to be safe. Will it be the only thing served so they are taking larger portions or will there be other sides?

    Yes, it will be the main course. Another question… can I get a large bag of frozen green beans (Costco size) & thaw them overnight, or would they get too soft?

      I would cook them part way through Jenifer. They should finish cooking throughout the day but by partially cooking them I think they will stay together better.

    Thanks for the great recipe. We go skiing for a week almost every year and I take our own food and fix everything in the crockpot. I brown and freeze all on my ground beef and chop and prepare the veggies, so in the morning I just throw everything in and set on high. We come back to a hot and ready lunch. Then I throw supper in the crockpot and set on high and then we hit the slopes again. That way supper is ready when we get back. It saves us alot money and we are usually eating healthier. It also keeps me from spending very much time in the kitchen. Some favorites are roast with potatoes and carrots, chili, bbq beef sandwiches, chicken and noodle soup, cowboy casserole, tacos, chicken wraps, italian chicken casserole, those are just some of our dishes. I am going to be adding this to our meals this year.

    Do you think carrots could be added? This sounds delicious. I have a new baby at home that hates being put down and 2 other kids I need to make dinner for. This sounds so quick, easy, and good! Can’t wait to try it!

      If you’re using ground I think I would cook it first. I generally use the precooked sausages so really they just need warmed up and to blend with the other flavors.

    I am trying this today. I used a spoon to mix it all up. It didn’t say you had to keep it layered. Do you think this will cause a problem?

      Thank you for pointing this out Brian. You will need to cook it at least 6 hours to get the potatoes cooked, however, you could cook it for 8-10 hours without a problem if you are going to be out all day. Enjoy!
