Simple Egg Salad

One of my favorite things about this simple egg salad is how it includes fresh dill and lemon juice. Instead of dill pickles or relish like others have included in the past, this one relies on some fresh herbs and lemon juice to offer great flavor. I find that many just don’t like the pop of vinegar with pickles but love the fresh dill flavor. That is what makes this simple egg salad an ideal choice.

We love adding eggs into our lunch routine since they pack such a great punch of protein and are so easy to prepare. Since they are also a frugal addition to the menu plan, they often make an appearance and I am so glad our family loves to see things like this simple egg salad or our favorite Spinach Avocado Egg Wrap on the menu for lunch.
