Blueberry Oat Muffins

Ingredients

  • 1 C flour
  • 1 C oats
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 1/2 C whole milk
  • 1/4 C oil
  • 1/2 C sugar
  • 1 C diced blueberries

Instructions

  1. Preheat oven to 425 degrees.
  2. Line muffin tin with paper liners.
  3. Mix flour, oats, baking powder, baking soda, and salt in a large bowl.
  4. Whisk the egg, whole milk, oil and sugar into another bowl.
  5. Add the diced blueberries into the wet mixture.
  6. Add the wet mixture to the dry mixture blending until just moist.
  7. Using a small ice cream scoop, scoop batter into lined muffin tins.
  8. Bake 18-20 minutes or until a toothpick inserted in the middle of the muffin comes out clean.
